This is the most affordable way to purchase our premium pasture raised, grass-fed, and grass finished beef. With your live animal purchase, we arrange the slaughter or harvest of the animal on our Trabuco Ranch, transportation to a local family butcher for processing, and communicate with the butcher on your behalf. Your meat will be hung for 25 days of dry aging to allow natural enzymes to tenderize and enhance the flavor. Our local butcher will then call you and provide you with options for meat cuts, (quantity of steaks, hamburger etc.). Your meat will then be custom cut and wrapped to your order. Once your meat is chilled, it is ready for you to pick up!
In the United States, there are 3 types of weight for finalizing your live animal purchase price:
- Live weight: The actual weight of the animal before harvest
- Hanging weight: The weight of the animal after removing parts that are not used, (hide, head, offal). This is 59-62% of the live weight.
- Cut or packaged weight: The finished or actual take-home weight of your meat. There is a 10-12 % loss from the hanging weight to your packaged weight due to water evaporation during aging, saw cuts, and removal of ligaments, tendons and gristle.
Cost: You pay the live weight ($3/pound) + the hanging weight ($1.25/pound) + Butcher cost ($175/whole or $87.5/half) . For an example, please see the below table for a sample purchase cost of a whole live animal:
Note: We harvest our animals at 30 to 36 months when they weigh 1200 to 1400 pounds.
The typical breakdown is 20% Steaks, 30%roasts and 50% hamburger, as well as your portion of bones and organ meats.
Note: You will be able to store an average of 28 pounds of meat per cubic foot of storage space.
Tip: We recommend a 14 cubic foot freezer for half beef purchases. A chest freezer is ideal since the cold air will not flow down when opened.
How to place a whole or half cow order:
We have a limited quantity with first deposits receiving a priority in our queue.
- Whole Beef Deposit: $1,500
- Half Beef Deposit: $750
Upon receipt of deposit, we will contact you directly with details about your order. The balance is due prior to the butcher date and we notify you with your invoice amount.
